Quick Zuchinni Side Dish

Serves/Makes: 2

Ingredients:
2 T olive oil
1 T butter
2 Med Zuchinni medium dice
2 spanish green onions (found in mexican markets) or you can use 4 scallions small dice
1 t onion powder
1 t garlic powder
1 t dried thyme
salt and pepper to taste
Optional: grated parmesean cheese
Directions:
In small skillet, add olive oil and butter over med-high heat, heat 45 seconds.
Add rest of ingredients and toss till zuchinni is softened but still retains bite,
about 4 minutes.
To Serve: Spoon on plate and sprinkle with grated parmesean cheese.
Cooks Notes: I know this is hardly a recipe but it is really tasty and actually has a wow factor without being difficult. If you don't have thyme substitute rosemary. It is equally lovely.
