Crockpot Sweet & Sour Ribs

Sweet & Sour Ribs
1 pound pork ribs cut to 1 inch
Onions, sliced
Celery, sliced
Bell Pepper, sliced
Sliced pineapple (optional)
Cooked rice
Sauce:
1/2 cup brown sugar
1/3 cup vinegar
1/2 teaspoon lemon juice
3/4 cup water
2 tablespoons soy sauce
2 tablespoons corn starch
Directions:
Coat bottom of crockpot with thin film of oil and place ribs,onions,bell pepper and pineapple in crockpot.
Mix remaining ingredients well in a sauce pan and bring to a boil stirring constantly until sauce thickens. If sauce requires more thickening mix 1 tablespoon of cornstarch with 2 tablespoons of water and add to mixture and continue to boil/stir until sauce thickens. Pour over ribs and cook on low 8 to 10 hours. Serve over rice.
