Ingredients:
4 eggs
small amount of butter
1 pckg. real bacon bits
-or-
sausage (fried and crumbled)
1 cup hash browns (fried)
frozen green chilies (canned will work too but frozen has better texture and tastes better)
4 tortillas
1/2 cup cheddar cheese
Directions:
Scramble eggs, add bacon and/or sausage; fry in a small amount butter until done. Warm tortillas (they roll better when they are warm). Put eggs in the middle of the tortilla, top with hash browns, green chilies and cheese and roll the tortilla.
How to roll the tortilla:
Put the filling in the middle, spread it out a little. Take left and right side of tortilla and fold towards the middle. Then roll from top to bottom.
Tips: Play with the amounts to fill the tortilla. The amount will depend on the size of tortilla. You can use fresh bacon, too, but by using real bacon bits, you eliminate frying and crumbling up the bacon. These sell really well when our youth group has a breakfast burrito sale. ENJOY!
