APPLE TOMATO CHUTNEY

1 medium onion
1 tablespoon olive oil
1 knob ginger grated
1 teaspoon nutmeg
1 teaspoon cinnamon
1-1/4 cup granulated sugar
1/4 cup honey
1 package cherry tomatoes quartered
1 cup red wine vinegar
3 cooking apples cored and chopped
1/4 orange juice
1 tangerine zest and juice
1/4 cup chopped walnuts (chopped very fine)
Slice onion into small pieces. Saute onions in olive oil. Grate into pan knob of ginger. Add cinnamon and nutmeg. Add red wine vinegar. Add sugar and bring to a boil.
Add chopped apples. Add orange juice. Add zest of tangerine and juice. Add quartered cherry tomatoes. Bring to boil. Add honey. Add chopped walnuts. Bring back up to a boil, then reduce to a simmer. Cook for 15 minutes. Great served with pork. Enjoy.
