Potatoes and tarragon

10 medium potatoes peeled and halved
3 sprigs tarragon chopped
salt and pepper to taste
3 tablespoons olive oil
1/2 medium sweet onion chopped in small pieces


Boil potatoes (rapid boil) in salted water 15 to 20 minutes just until tender. Drain. Heat a large skillet add olive oil. Add onions cook 3 minutes or until tender. Add potatoes. Add tarragon. Brown potatoes on all sides 2 to 3 minutes on each side. Serve hot. enjoy
