Lemon Meringue Pie

Serves 8

Cook time 8 to 12 minutes
lemon filling
1-1/2 cups of sugar
1/3 cup of cornstarch
1-1/2 cups of water
3 egg yolks
3 tablespoons butter
1/4 cup lemon juice
1 tablespoon lemon rind
meringue
3 egg whites
1/4 teaspoon cream of tarter
6 tablespoons sugar
1- 8 inch pie shell
preheat oven 400 degrees
In a medium sauce pan mix 1 and 1/2 cups of sugar and 1/3 cup of cornstarch. Gradually stir in 1 and 1/2 cup of water. Stir over medium heat until mixture thickens. Boil for 1 minute. Temper mixture into beaten egg yolks. Add tempered mixture to pot boil for one minute continue to keep stirring. Blend in 3 tablespoons of butter. Add 1/4 lemon juice and 1 tablespoon of lemon rind.
Pour hot filling into prepared 8 in pie crust. prepare meringue by beating egg whites until stiff slowly add in sugar and cream of tarter continue to beat while doing this. End mixture should be stiff and peaks stand. Cover lemon mixture with meringue. Bake in oven for 8 to 10 minutes. Until light golden brown.
