Julia\'s custard pudding with cake

bake time 1 hour
350 degree oven

5 eggs plus 5 egg yolks
1 cup of sugar
1 1/2 cup of hot milk
1 tablespoon vanilla
pound cake or vanilla cake premade and cooled
Apricot glaze

preheat oven 350 degrees
Wisk eggs, egg yolks, and sugar together. Very slowly stir in hot milk. Make certain to temper. Stir in vanilla.

Butter square 8x8 pan bottom and sides. Place parchment paper on bottom. Cut 1 inch layers of cake place in bottom of pan. Ladle in custard. Continue to repeat until pan is filled. Place entire pan into a larger pan with water in it. Make sure water does not get into mixture. Place into oven. Check every 20 minutes water should not bubble. When custard is done skewer should come out clean. It will take about 1 hour.

Let stand about 20 minutes or overnight. Flip out of pan. Remove parchment paper. Cut into slices. Brush on warm apricot glaze. (make apricot glaze by boiling 1/2 cup of apricot jam with 1 tablespoon of sugar. Stir constantly.) Brush on top and sides. Add crushed almonds to the sides. Serve warm or cold.
