Serves/Makes: 1.25 lbs.
Ready in: 30-60 minutes

  • 1 cup sugar
  • 1 cup light corn syrup
  • 1 cup light cream
  • 3/4 cup butter
  • 1 cup chopped pecans
  • 1 teaspoon vanilla extract

Lightly butter 8- x 8- x 2-inch cake pan.

Combine sugar, corn syrup, light cream and butter in large heavy saucepan. Cook over medium heat. Cook to 244 degrees F on a candy thermometer, stirring constantly. Stir in pecans and vanilla.

Pour into prepared pan. Let stand until firm. Turn onto cutting board and cut with a sharp knife. Wrap individually in waxed paper.
