Serves/Makes: 8
Ready in: 30-60 minutes
- 4 large flour tortillas
***Apples***
- 4 cooking apples peeled, cored and sliced thin
- 6 tablespoons salted butter
- 3/4 cup granulated sugar
- 1 tablespoon ground cinnamon
- 1/8 teaspoon ground cloves
- 1 lemon, juiced
***Topping***
- 2 tablespoons salted butter
- 1/4 cup granulated sugar
- 1/2 tablespoon ground cinnamon
***Optional***
- 1 cup grated sharp Cheddar cheese
- 1 cup fresh whipped cream
Apples: In large skillet melt the butter over medium heat, add sliced apples, sugar, cinnamon, cloves, and lemon juice. Keep frying until all ingredients are married and the juices are reduced to thick sauce. Add a tablespoon of cornstarch mixed with 3 tablespoons of water if the reduction isn\'t thickening. Lay tortillas out on flat surface. Add 1/4 of apple mix to each tortilla. Roll up as your would a burrito. Place apple burritos on a greased baking sheet with flap side down. Topping: Melt the butter in same sauce pan and brush over the burritos. Combine the sugar and cinnamon and sprinkle generously over the burritos. Bake in 350 degrees F oven until golden brown, approximately 20 minutes. Once golden brown sprinkle grated cheese over top and place under broiler until the cheese melts. Or, serve with whipped cream. Cook\'s notes: These are large burritos...slice into bite size portions (like you would slice sushi) and serve a crowd or slice in half.
