Seafood Salad from Corolla/Whales head/Outer Banks

Yield: approximately 2 1/2 pounds

INGREDIENTS:

1 Lb Cooked Shrimp – peeled and deveined – chopped
1 Lb Cooked Crab Meat – Shredded (canned)
1 Cup Celery – small dice
¼ Cup Green Onion – chopped fine to med.
¼ Cup Green Pepper – small dice
¼ Cup Roasted Red Pepper – small dice
1 t Lemon Juice
1 Cup Miracle Whip
½ Cup Sour Cream
1 t Old Bay (or to taste)
To taste Salt and Pepper

DIRECTIONS:
1. Combine and blend together, Miracle
Whip, Sour Cream, Lemon Juice,
and Old Bay.
2. Add Shrimp, Crab, Celery, Green
Onion, Green Pepper, and Roasted
Red Pepper.
3. Stir to mix all ingredients.
4. Taste to adjust seasoning.
5. Chill for 6 hours to allow all the
flavors to marinate.
6. Serve.

NOTES:
With Lobster - Decrease amount of shrimp and crab to 3/4 pound. Add 3/4 pound cooked lobster meat to seafood mix.

SERVICE OPTIONS:
Can be served as is or on a bed of lettuce or on a half tomato.
Can also be served with a hard roll as a sandwich.

HISTORY:
This recipe was developed while my family and I were on vacation in the Outer Banks of North Carolina in 2010. The weather was great and hot. I threw this together from the remenents of a seafood dinner that we had had previously, wanting a cool alternative.
