Zucchini Pie

2 TBS Margarine
4 Cups thinly sliced zucchini
1/2 cups chopped onions
3 TBS parsley
1/4 tsp garlic
1/4 tsp basil
1/4 tsp oregano
salt and pepper to taste
2 eggs beaten
2 cups mozzarella cheese
1 can crescent rolls

preheat oven to 375 degrees
melt margarine in skillet add zucchini and onions cook until tender, add parsley, salt, pepper, garlic powder, basil, oregano stir lightly. In large bowl combine beaten eggs cheese and mix the zucchini mixture to bowl, stir.
Seperate crescent roll dough and place in ungreased pie pan to form a crust. Pour zucchini mixture over crust and bake for 20 minutes.

*** I added whatever else I had in the garden, tomatoes and banana peppers at the time and fresh herbs
