French Mushroom Onion Quiche

2 frozen 9 inch pie shells, prebaked at 400 for 8 minutes. Use the shallow shells, not the deep dish ones.
4 tbsps. butter
1 onion, finely chopped
2 shallots, minced
1/2 lb. mushrooms, sliced
3 eggs
1 1/2 cups cream
1/2 cup grated Parmesan cheese
salt and pepper to taste
1 3 oz. pkg. cream cheese, with chives, cut into 1/2 inch pieces

Prepare pie shells and put them on a cookie sheet. Saute together next 4 ingredients until onions are tender. Divide mixture between the 2 pie shells.

Beat together eggs, cream, cheese and seasonings until blended and divide mixture between the 2 shells. Divide the little cube of cream cheese between the 2 quiches.

Bake at 350 degrees for 40 to 45 minutes or until custard is set and top is golden brown.
Serves 12.
