Hot and Spicy Cajun Cornmeal Beef Pie with Chili's and Cheese

3/4 lb. ground beef
1 medium onion, grated
4 cloves garlic, minced
3 whole green chili's, canned, coarsely chopped
1 cup grated cheddar cheese
1/8 tsp. cayenne pepper or more to taste
1 cup yellow cornmeal
2 eggs
1 cup milk
1 1/2 tsps. baking soda
1/4 cup melted butter
salt and pepper to taste

In skillet, saute together beef, onion and garlic until meat is crumbly and loses its pinkness. Drain beef mixture and toss with chili's, cheese, and cayenne pepper. In another bowl, beat together remaining ingredients until blended.

In greased 10 inch quiche pan, pour 1/2 the cornmeal batter. Sprinkle meat mixture evenly on top, and pour remaining batter over all. Bake at 350 degrees for about 25 minutes or until top is golden brown and batter is set. Serves warm.
Serves 6.
