Baby Broccoli Muffins

margarine or oil for greasing muffin tins
1 10 ounce package frozen chopped broccoli, cooked
1 7 1/2 ounce box corn muffin mix
4 eggs, beaten
1 stick margarine, melted
3/4 cup cottage cheese
1 large onion, chopped

Preheat oven to 425 degrees. Grease miniature muffin tins. Drain broccoli well.

Mix broccoli, corn muffin mix, eggs, margarine, cottage cheese and onion until blended. Divide among muffin tins and bake 10 to 12 minutes.

Variation: If desired, dollop muffins with sour cream and a broccoli floret.
Yields 5 to 6 dozen muffins.
