Mustard-Marinated Shrimp

Mustard-Marinated Shrimp

1 pound medium shrimp, peeled and deveined
2 tablespoons spicy brown beer-flavored or Dijon-style mustard
1 large shallot, finely chopped
2 tablespoons rice vinegar
1/4 cup olive oil
1/2 teaspoon red pepper flakes or hot sauce to taste
1/2 teaspoon dried tarragon
2 tablespoons finely chopped fresh parsley
salt and freshly ground pepper to taste

Cook shrimp in a generous amount of boiling salted water for 2 to 3 minutes, until they just turn pink and are firm to the touch. Drain immediately and briefly rinse with cold water.

Combine remaining ingredients in a small bowl and mix well. Pour over warm shrimp and toss to coat. Cool for 5 to 10 minutes, cover tightly and refrigerate for at least 1 hour before serving. Serve with toothpicks.
Serves 4 to 6.
