Crisp Potato "Pizza" (Pizza di patate)

2 large cloves garlic
3 tightly packed tablespoons Italian parsley leaves
1 1/2 pounds small red potatoes, very thinly sliced
1 medium red onion, very thinly sliced
zest of 2 large oranges
1/3 cup pitted, coarsely chopped, oil cured black olives
3 tablespoons extra virgin olive oil
1/2 teaspoon dried oregano
1/8 teaspoon crushed red pepper flakes or to taste
salt, freshly ground black pepper

Heat oven to 500 degrees. Mince together garlic and parsley to blend flavors. Place in large bowl with potatoes and onion. Add half of the zest, half of the olives, olive oil, oregano, red pepper flakes, salt and pepper to taste and toss to coat. Spread mixture over well oiled 14 inch pizza pan or jellyroll pan.

Bake 20 minutes. Sprinkle with remaining zest and olives. Bake until potatoes are speckled golden-brown and zest has darkened, about 10 minutes. If potatoes are tender but not browned, place under broiler for 1 to 2 minutes. Cut into wedges and serve hot.
Serves 4.
