Spicy Curried Cashews

1 pound whole, raw cashews
2 teaspoons unsalted butter, melted
1 tablespoon curry powder
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon ground cayenne pepper

Preheat oven to 350 degrees. Toss the cashews and melted butter together until evenly coated.

Place on a sheet pan and bake until golden brown, about 10 minutes, checking occasionally to make sure they don't burn. Remove from the oven.

Combine the curry powder, salt, garlic powder, onion powder and cayenne pepper. Toss the spices with the warm nuts. Allow to cool before serving. Store in an air-tight container for up to 10 days.
Yields 1 pound.
