Almond Butter Cookies

Almond Butter Cookies

1 1/4 cups flour
1/2 tsp. baking powder
1/8 tsp. salt
1 1/4 cups slivered almonds, divided
10 tbsps. butter, softened
3/4 cup sugar
1 egg
1 tsp. vanilla

Preheat oven to 350 degrees. Grease cookie sheets.

Combine flour, baking powder and salt in small bowl. Finely chop 3/4 cup almonds and set aside.

Beat butter in large bowl with electric mixer at medium speed until smooth. Gradually beat in sugar until blended and increase speed to high and beat until light and fluffy. Beat in egg until fluffy. Beat in
vanilla until blended. Stir in flour mixture until blended. Stir in chopped almonds just until combined.

Drop rounded teaspoonfuls of dough about 2 inches apart onto prepared cookie sheets. Top each cookie with several slivered almonds, pressing into dough.

Bake 12 minutes or until edges are golden brown. Let cookies stand on cookie sheets 5 minutes and transfer to wire racks to cool completely. Store in airtight container.
Yields about 42 cookies.
