Frosted Lime Cookie Wafers

Wafers:
1 cup butter or margarine, softened
1 cup granulated sugar
1/2 teaspoon baking soda
1/2 teaspoon finely shredded lime peel or 1 teaspoon finely shredded lemon peel
1/3 cup lime juice or lemon juice
2 1/4 cups all-purpose flour

Pastel Glaze:
1 cup sifted powdered sugar
3 tablespoons butter or margarine, melted
1 to 2 tablespoons lime juice or lemon juice
few drops green or yellow food coloring, optional

In a mixing bowl beat the butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add the sugar, baking soda, and lime or lemon peel and beat till combined. Beat in the lime or lemon juice. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour with a wooden spoon.

Drop dough by rounded teaspoons 2 inches apart onto ungreased cookie sheets. Bake in a preheated 375 degree oven for about 10 minutes, or till the edges are beginning to brown. Remove cookies and cool on wire racks.

Meanwhile, for pastel glaze, in a small mixing bowl stir together the powdered sugar, melted butter or margarine, and enough lime or lemon juice to make a mixture of glazing consistency. If desired, stir in food coloring. Dip tops of cookies in glaze.
Yields about 48 cookies.
