Spicy White Bean Chili

Spicy White Bean Chili

1 tablespoon olive oil
1 1/2 pounds boneless, skinless chicken breasts, cut into small cubes
1/2 cup onion, chopped
1 cup chicken broth
1 4 oz. can chopped green chiles
1 19 oz. can white kidney beans, undrained
4 green onions, sliced

Spice Blend:
1 tsp. garlic powder
1 tsp. ground cumin
1/2 tsp. oregano
1/2 tsp. dried cilantro
1/8 tsp. cayenne

Heat oil in large saucepan. Add chicken and onions. Cook about 5 minutes. Stir in broth, green chiles and spice blend. Simmer 15 minutes. Stir in beans. Simmer another 5 minutes. Turn off heat and let side for 1 hour. Warm slowly.

Top with onions. You can garnish this with fresh cilantro and grated montery jack cheese.
Serves 6.
