Spicy Mango-Shrimp Appetizers

1 1/2 pounds peeled cooked shrimp
1/4 cup lemon juice
1/4 cup olive oil
2 tablespoons white wine vinegar
2 tablespoons chili sauce
1 tablespoon honey
1 teaspoon grated fresh ginger
1 clove garlic, finely chopped
1/4 teaspoon salt kale or lettuce
1 medium mango or papaya, peeled, seeded and sliced

Place shrimp in medium sized deep bowl.

For marinade, combine lemon juice, oil, vinegar, chili sauce, honey, gigner, garlic and salt in screwtop jar. Cover and shake well.

Pour over shrimp. Marinate in refrigerator 2 to 4 hours, stirring occasionally. Drain shrimp, discarding marinade.

Transfer shrimp to serving bowl. Arrange kale or lettuce and mango or papaya around shrimp.
Serves 8 to 10.
