Malaysian Lamb Curry
1 tbsp. oil
1 tsp. sesame oil
2 onions chopped
2 tsps. grated green ginger
1 clove garlic, crushed
1 1/2 tbsps. curry powder
1 1/2 lbs. diced lamb
3/4 cup coconut milk powder
2 cups warm water
12 small potatoes, peeled
1 red chilli pepper, cut into strips
1 tbsp. chilli sauce
1 tbsp. oyster sauce
Heat oils in pan, add onion, ginger and garlic and cook 1 minute. Add curry powder cook stirring 2 minutes. Add lamb, cook until browned.
Combine coconut milk powder and water, add to pan, bring to boil. Reduce heat, simmer covered 20 minutes. Add potatoes and simmer a further 20 minutes until potatoes are cooked and lamb is tender. Add chilli pepper, chilli sauce and oyster sauce, return to boil, serve with rice.
Serves 4 to 6.
