Indian Crisp Cauliflower and Potatoes
1 lb. cauliflower florets, fresh works best, but frozen will do
1/2 lb. cooked potatoes, cubed
1 1/2 teaspoon salt
1/4 cup oil
1 teaspoon cumin seeds
1 heaped tablespoon ginger paste
1 teaspoon turmeric powder
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1 teaspoons chili powder, optional
1/4 teaspoon garam masala, optional
1 tablespoon chopped cilantro
2 green jalapenos slit lengthwise, optional
Heat oil in a frying pan or saucepan and fry cumin seeds and jalapenos for half a minute, followed by ginger paste for a couple of minutes. Add cauliflower, potatoes, cilantro, salt, along with cumin, coriander, turmeric, chilli and garam masala powders. Stir thoroughly to mix. Cover with a lid until done, about fifteen minutes on medium low heat.
Serves 4.
