Grilled Thick Burger
1 1/4 lbs. fresh ground beef
thin cheddar or Swiss cheese slices
salt and pepper
1 tbsp. vegetable oil or butter
cooked bacon
4 hamburger buns or Kaiser rolls
butter
ketchup
onions
mayonnaise
ripe tomatoes
dijon-type prepared mustard
iceberg lettuce leaves
salsa
small whole pickles
Set stovetop grill over high heat until quite hot. Divide meat into 4 portions. With cupped hands, form each portion into loose round; then shape into smooth disk, just under an inch thick and about 3 1/2 inches in diameter. Season with salt and freshly ground pepper.
Rub each side of patties with drops of oil. Lay burgers on hot grill, cook about 3 minutes, until well marked, then turn and cook on second side for same amount of time.
Test for doneness with light finger press. While burgers are cooking,
cut rolls in half and toast them directly on grill for about 1 minute, then let your guests start building their sandwiches.
When burgers are cooked to taste, remove them directly onto roll bottom. Sprinkle with salt and pepper or let your guests do it to taste and top with more condiments.
Yields 4 burgers.
