Butternut Squash and Sharp Cheddar Casserole

1 1/4 lbs. butternut squash, sliced
1/2 cup bread crumbs
1/2 cup milk
1/2 small onion, chopped
1 stalk celery, finely sliced
1/2 cup sharp cheese, grated
1/2 egg, beaten
2 tbsps. butter
salt and pepper

Cook squash with onion and salt in a little water until tender. Drain and mash.

Mix squash, onions, bread crumbs, milk, celery, egg, butter, salt and pepper.

Pour in a greased casserole and top with the cheese. Bake at 350 degrees for 30 minutes.
Serves 4.
