Spains Cabbage Salad

1 lb. green cabbage, shredded
2 medium carrots, scraped, cut in julienne strips
1 green pepper, cut in julienne strips
3 tbsps. raisins
4 tbsps. olive oil
2 tbsps. white wine vinegar
1 1/2 tsps. Dijon-style mustard
salt
freshly ground pepper

Combine the cabbage, carrot, green pepper and raisins in a bowl. In a separate bowl, whisk the oil, vinegar, mustard, salt and ground pepper and fold into the cabbage mixture.

Taste for salt, adjust seasoning if desired, cover and refrigerate several hours.
Serves 6 to 8.
