Colorful Sassy Rice

2 1/4 cups water
1 cup converted white rice
1/2 teaspoon ground turmeric
1 tablespoon vegetable oil
3/4 cup chopped onion
3/4 cup chopped green bell pepper
1/2 cup shredded carrot
1 cup barbecue sauce
1 tablespoon seasoned salt
1 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper

In a 2 quart saucepan, bring the water to a boil. Stir in the rice and turmeric and return to a boil. Reduce the heat and simmer, covered, until the water is absorbed, about 20 to 25 minutes.

In a large skillet, heat the oil over medium-high heat. Add the onion, bell pepper and carrot, cook, stirring, until soft, about 4 to 6 minutes. Add the barbecue sauce, seasoned salt, garlic powder and black pepper. Add the rice and cook, stirring, until all the ingredients are combined and the rice is heated through.
Serves 4.
