No-crust Coconut Pie

4 eggs beaten
1/2 cup self-rising flour
1/2 stick butter, melted
1 teaspoon vanilla
1 3/4 cups sugar
2 cups milk
1 7 ounce package flaked coconut, we toasted it

Preheat oven to 350 degrees. Mix together eggs, flour, melted butter, vanilla, sugar, milk and coconut. Pour into 2, 9 inch pie plates.

Bake for 30 to 40 minutes or until knife inserted in middle of pie comes out clean.
Serves 16.
