Onion Watercress and Potato Soup

1 3/4 cups chopped onions
1/4 cup unsalted butter
2 cups potatoes, peeled, diced
5 cups chicken stock
1/2 teaspoon white pepper
1 teaspoon salt
4 cups watercress stems and imperfect leaves, firmly packed
creme fraiche, sour cream or lightly whipped cream

Saute onions in butter for 10 minutes, or until onions are translucent. Add potatoes, chicken stock, pepper and salt. Bring to a boil, then reduce heat and simmer for 10 minutes, or until potatoes are soft. Add watercress and simmer for an additional 5 to 8 minutes.

Place soup in a blender and blend until homogenized. Pour through a strainer into another container.

Serve with creme fraiche or sour cream or lightly whipped cream.
Serves 5.
