Spicy Chicken with Basil Saute With Thai Flavors

1 pound boneless, skinless chicken breasts
1/4 cup peanut or vegetable oil
4 scallions, green and white parts, chopped
1/2 red bell pepper, very thinly sliced
1 1/2 to 3 tablespoons stemmed and chopped and seeded Thai chili's
1/4 cup fish sauce
1 teaspoon light brown sugar
freshly ground pepper
1 to 1 1/2 cups loosely packed basil leaves

Cut the chicken into very small dice. Heat a wok or skillet over high heat and add the oil. When it has heated enough to create a light smoke haze in the pan, add the chicken and stir-fry until it is very lightly browned, about 1 minute. Remove the chicken with a slotted spoon and set aside.

Add the scallions, pepper and chilies to the pan and stir-fry over high heat for about 1 1/2 minutes. Drain the oil, leaving about 2 teaspoons in the pan.

Return the chicken, add the fish sauce, sugar and pepper and stir-fry for about 30 seconds. Stir in the basil leaves. Serve immediately.

If the basil leaves are overheated their flavor may dominate the dish. Serves 4.
