Jamaican Fry Bread

In Jamaica these are called Festivals. They are served everywhere.

2 cups flour
1 tsp. salt
1/4 cup cornmeal
5 tsps. chilled butter
3 tbsps. sugar
3/4 cup evaporated milk
2 tsps. baking powder
2 cups peanut oil for frying

In large bowl, combine flour, cornmeal, sugar, baking powder and salt. Cut in butter until mixture feels crumbly. Add enough evaporated milk to obtain stiff but pliable dough.

Pinch off walnut-sized pieces of dough and roll between your hands to make long thin ropes and recipe should make about 24 ropes 10 inches long.

Fold each rope in half and twist together. Heat oil to 350 degrees and gently lower into oil, turn with slotted spoon. Fry until golden brown, then transfer to paper towels to drain and serve hot.
Serves 10.
