Grilled Spicy Beef Quesadillas

1 1/2 cups prepared thick, chunky salsa
1/2 cup frozen whole corn kernels
8 medium flour tortillas
1/4 cup fresh cilantro
3 cups cheese, we liked jalapeno jack
3 tbsps. fresh lime juice
3/4 lb. thinly sliced deli roast beef
1 cup canned black beans

In medium bowl, combine salsa, chopped cilantro and lime juice. In second bowl, combine 1/2 cup salsa mixture, beans, rinsed and drained and thawed corn. Set aside remaining salsa mixture.

Sprinkle shredded cheese evenly on one side of each tortilla, 8 to 10 inch diameter and divide beef evenly among tortillas. Top
with scant 1/4 cup of bean mixture. Fold tortillas in half.

Place quesadillas on grid over medium, ash covered coals. Grill, uncovered, 4 to 5 minutes or until golden brown, only turn once. Serve with reserved salsa mixture.
Yields 8 quesadillas.
