Greek Lamb Burgers Stuffed with Feta

1/2 pound lean ground lamb
3/4 cup fine, soft bread crumbs
3/4 cup finely chopped onions
1 egg white
1 tablespoon tomato paste
1 teaspoon grated lemon peel
1/2 teaspoon cinnamon
1/2 teaspoon freshly ground black pepper
2 ounces feta cheese, cut into 4 pieces
4 hamburger bun or fresh Greek rolls, split
mint leaves

Preheat grill. Coat grill rack with cooking spray and place on grill.

Combine lamb, bread crumbs, onions, egg white, tomato paste, lemon peel, cinnamon and black pepper in large bowl and mix gently but thoroughly.

Shape into 4, 3 to 3 1/2 inch patties, tucking a piece of feta in the center of each. Arrange on grill rack.

Grill patties over direct medium heat until done, 8 to 10 minutes per side, turning once with a spatula. Arrange the bun or rolls on the grill, cut sides down and toast for 3 minutes.

Place patties in muffins and garnish with mint leaves.
Serves 4.
