Southwestern Mixed Rice Salad

2 cups cooked wild rice
1 cup cooked brown rice
1 cup cooked barley
1 cup soaked bulgur
1/2 cup toasted pecan halves, chopped
1 cup fresh corn kernels, sauteed
1 large tomato, peeled, seeded, and chopped
1 cup chopped green onions
1/2 cup chopped fresh parsley

Dressing:
1 cup rice vinegar
1/4 cup peanut oil

In a serving bowl, combine the rices, barley, bulgur, pecans, corn, tomato, green onions and parsley. In a small bowl, combine the remaining ingredients. Pour the dressing over the salad.
Serves 8.
