Corn, Grapefruit and Candied Ginger Relish

1 cup drained canned corn
1 1/2 cups fresh pink grapefruit sections, cut into 1/2 inch pieces, membranes removed and juice reserved
1/4 cup finely sliced scallions, green part only
3 tablespoons candied ginger, cut into paper-thin strips
1/4 teaspoon salt
1 dried bird pepper, minced or one small minced chili pepper

In a medium bowl, combine the grapefruit, corn, scallions, ginger, salt and pepper. Cover and refrigerate at least 30 minutes.

Serve at room temperature, with chips or over chicken or fish.
Yields 2 1/2 cups.
