Mushrooms and Onions With Fusilli

4 tablespoons unsalted butter
2 medium onions, finely chopped
2 pounds mushrooms, sliced
1/4 teaspoon ground nutmeg
salt
freshly ground black pepper
1 cup heavy cream
1 pound fusilli pasta
freshly grated parmesan cheese for serving

Heat the butter in a large heavy saucepan, add the onions, and cook over moderate heat until they are softened. Add the mushrooms and cook until they have given up all their liquid. Add the nutmeg and season with salt and pepper to taste. Add the cream and cook just long enough to heat the mixture through.

Cook the fusilli according to package directions. Drain thoroughly. In a large bowl, toss together the pasta and sauce until blended.

Serve immediately with the Parmesan cheese.
Serves 4.
