Salad Lovers Herb Dressing

1/4 cup white wine vinegar
1 to 2 tbsps. lemon juice, freshly squeezed is best
1/2 tsp. sugar
1/2 tsp. mild prepared or Dijon mustard
2 to 3 tbsps. freshly chopped herbs, mint, basil, cherval, use your favorites
1/2 cup good light olive oil
1 clove garlic, halved

Whisk together all ingredients, except the garlic, thoroughly. Let the
flavors blend at room temperature.

Rub the salad bowl with the freshly cut halves of the garlic clove, then discard them. Add washed and dried assorted crispy greens. Pour the whisked-up dressing over the greens, toss and serve promptly.
Serves 4 to 6.
