Turkey Scallopini with Dijon Sauce

1/4 cup vegetable oil
1/4 cup honey
2 tbsps. Dijon mustard
2 tbsps. lemon juice
1 clove garlic, minced
1/4 tsp. dried thyme
salt and pepper to taste
1 lb. turkey scallopini

In bowl, combine vegetable oil, honey, mustard, lemon juice, garlic, thyme, salt and pepper. Brush on turkey scallopini.

Grill over medium heat 2 to 4 minutes or until no longer pink in centre.

Or pan-fry brushed scallopini in 1 tbsp. vegetable oil about 2 minutes per side.
Serves 4.
