Fresh Asparagus Potato Soup

2 teaspoons olive oil
1 large sweet onion
1 large Idaho potato, peeled and cut into 2 inch pieces
4 cups vegetable broth
3 pounds medium-sized asparagus, tough bottoms removed and discarded, cut into 1 inch pieces, tips reserved
salt and freshly ground pepper

Heat oil in a heavy saucepan over medium high heat. Add onion and cook, stirring, until it begins to soften, 2 to 3 minutes. Add potato and broth, increase the heat to high, and bring liquid to a boil. Cover saucepan, reduce the heat to medium-low and simmer until potato breaks apart easily when pierced with a fork, about 20 minutes. Add the asparagus and cook 5 minutes longer.

Transfer the soup to a food processor or blender or use an immersion blender, and process until smooth. Return soup to the pan, add asparagus tips, season with salt and pepper to taste, and gently reheat, allowing tips to soften.
Serves 6.
