Peanut Sauce Rice Noodles

Peanut Sauce Rice Noodles

8 ounces uncooked rice-stick noodles
1/2 cup creamy peanut butter
2 tablespoons soy sauce
1 teaspoon grated ginger root
1/2 teaspoon crushed red pepper
1/2 cup chicken broth or water
4 ounces bean sprouts
1 small red bell pepper, cut into 1/4 inch strips
2 green onions, sliced
2 tablespoons chopped fresh cilantro, optional

Heat 2 quarts water to boiling. Break noodles in half and pull apart slightly and drop into boiling water. Cook uncovered 1 minute and drain. Rinse with cold water and drain.

Mix peanut butter, soy sauce, ginger root and red pepper in small bowl with wire whisk until smooth. Gradually mix in broth.

Place noodles in large bowl. Add peanut butter mixture, bean sprouts, bell pepper and onions and toss. Sprinkle with cilantro if desired.
Serves 4.
