Broccoli and Cauliflower With Crumbs

2 cups each broccoli florets and cauliflower florets
1 egg white, beaten
1 tbsp. canola oil
1/3 cup dry bread crumbs
3 tbsps. ground almonds
2 tbsps. grated parmesan cheese
1 tbsp. chopped fresh parsley leaves
1/4 tsp. each kosher salt and ground black pepper

Preheat oven to 450 coat a baking sheet with nonstick spray. Cook broccoli in microwave oven until crisp tender, 2 to 3 minutes on high. cook cauliflower in microwave until crisp tender, about 5 minutes on high.

Mix egg white and oil in dish. Stir crumbs, almonds, parmesan, parsley, salt and pepper in another dish.

Dip florets first in egg mixture, then dredge in crumbs. Arrange florets on prepared baking sheet. Bake 8 to 10 minutes.

Serve with a honey mustard dipping sauce, recipe follows.
Serves 4.

Honey Mustard Dipping Sauce:
Mix 3 tbsps. Dijon mustard, 1 tbsp. honey and 1 tsp. whole grain mustard in bowl. Stir until smooth.
Yields 1/4 cup.
