Sweet Onion Quiche

9 inch pie shell
2 large sweet onions, chopped
3 tablespoons butter
3 eggs
1 cup sour cream
1/4 cup milk
1 teaspoon salt
1/4 teaspoon pepper
1/2 parmesan cheese
grated paprika

Move oven shelf to the lowest position in the oven. Preheat oven to 350 degrees.

Line a pie pan with the pie crust.
Beat eggs until frothy. Add sour cream, milk, salt and pepper. Mix well. Add onions. Stir. Pour into pie shell.

Scatter cheese over top of pie filling. Sprinkle with paprika. Bake about 30 minutes or until a knife inserted in center comes out clean. Serve immediately.
Yields 8 to 10 appetizers.
