Grilled Shrimp Preserved Lemon Quinoa

1 cup quinoa
2 cups water
1 bunch sliced scallions
1 preserved lemon skin, diced
1 red onion, diced
1/4 cup fresh lemon juice
1/2 cup extra virgin olive oil salt to taste
1 lb. fresh shrimp, peeled & deveined
3 cloves garlic, chopped

Bring water to a boil and add quinoa. Cook for 10 minutes. Remove from heat and cover. Let steam for 15 minutes. Add lemon juice and olive oil. Let cool at room temperature.

Fold in the rest of the ingredients and season to taste. Toss shrimp with garlic and three tablespoons of olive oil. Cook on a hot grill until just cooked through. Serve shrimp on quinoa.
Serves 4.
