Carrot Cheesecake Muffins

Carrot Cheesecake Muffins

1/3 cup butter or margarine
2 eggs
1/2 cup each evaporated milk
1/2 cup chopped walnuts
1/2 cup brown sugar
1 1/4 cups each finely grated carrots
1 1/4 cup flour
1 tsp. baking powder
1 8 oz. pkg. cream cheese, softened
2 tbsps. each frozen orange juice concentrate, sugar
1 1/2 tsps. finely grated orange zest, divided
1/2 cup raisins, optional
1/2 tsp. cinnamon

Heat oven to 350 degrees. Blend cream cheese, 2 tbsps. granulated sugar and 1/2 tsp. orange zest until thoroughly mixed and set aside until needed. Cream butter and brown sugar until light.

Beat in eggs, orange juice concentrate and evaporated milk. Stir in orange zest, carrot, raisins and walnuts, thoroughly blend.

In a large bowl, combine flour, baking powder and cinnamon. Add carrot mixture and stir just until moistened.

Spoon 2 tbsps. batter into each greased muffin tin. Spoon 1 tbsp. cream
cheese mixture on top.

Cover with remaining batter. Bake 15 to 20 minutes.
Makes 12 muffins.
