Fiesta Lime Chicken

Ingredients:
4 chicken breasts
1/2 cup teriyaki sauce
juice of 1/2 lime
2 cups tortilla strips or crumbled tortilla chips
2 cups Mexican cheese blend
For sauce:
1 cup mayonnaise
1 cup sour cream
1 cup pico de gallo salsa
4 tsp Cajun blackened spice mix
2 tsp hot sauce
1/2 tsp dried dill weed
1 tsp cumin
juice of 1/2 lime
Directions:
1. In a bowl combine sauce ingredients, mix well, cover and refrigerate.
2. Put a chicken breast in a plastic gallon storage bag, seal and pound to 1/4" thickness. Repeat with remaining breasts.
3. Brush chicken with teriyaki, drizzle with lime juice and grill over medium heat until cooked.
4. Transfer chicken to baking dish, top with sauce, then cheese and bake at 350 until cheese is melted.
5. Serve on a bed of tortilla strips with Mexican rice, pico de gallo and a lime wedge.
Notes: Do not exceed 1/2 tsp of dill weed (a little goes a long way). You may want to halve the sauce recipe unless you want a lot left over (works well all by itself as a dip).
