Toffee Apples

Ingredients:
2 medium size firm apples
2 egg whites
1 tbsp. corn flour
4 tsps. roasted black sesame seeds
1/2 tsp. salt
2 cups water (chilled)
2 tbsps. lemon juice (chilled)
1 1/3 cup sugar
2 tbsps. water
3 cups oil

Directions:
Peel and core apples, cut them into 4 or 6 pieces, put them in a bowl with 2 cups chilled water, lemon juice and salt. Beat egg whites and corn flour in a bowl until smooth. Drain apple pieces, wipe them dry. Heat oil (smoking hot) dip apple pieces into egg batter and fry till apple pieces turn golden brown. Remove and drain off excess oil. Place sugar and 2 tablespoons water in a pan over high heat. Stir all the time until sugar dissolves, bring to the boil. When sugar dissolves, add 1 tablespoon oil and keep stirring constantly. Boil till syrup hardens when you drop in cold water. Add fried apple pieces to the syrup, coat them well. Grease a plate with oil and place the apple pieces. Before serving take a large bowl of ice water and put the sugar coated apple pieces into it and remove immediately to a lightly greased serving plate. Sprinkle sesame seeds over apple pieces.
