Skillet Herbed Tilapia

- 1/2 cup butter
- 4 tilapia fillets
- lemon pepper seasoning, to taste
- 1 teaspoon chopped fresh basil
- 1 teaspoon chopped fresh tarragon
- 1/4 cup fresh lemon juice
- 1/2 cup white wine
- 1 lemon, sliced
- 4 parsley sprigs, chopped
Melt the butter in a non-stick skillet over medium heat. Season the tilapia with the lemon pepper seasoning and place the fish in the skillet. Cook for 2 minutes per side, or until the fish flakes easily with a fork. Carefully remove the tilapia from the skillet and place on individual dinner plates. Add the basil and tarragon to the skillet and cook for 1 minute, stirring occasionally. Add the lemon juice and wine and heat through, about 1 additional minute. Pour the wine-herb sauce over the tilapia fillets. Garnish with lemon slices and parsley. Serve immediately.
