BRICK PROVENCAL

Brick Provencal
For 6 Persons
Preparation time: 15 minutes
Cooking time: 16 minutes
Ingredients:
12 sheets of Phyllo (Filo)
12 mini mozzarella balls
12 black olives
6 tomatoes
2 sprigs thyme
olive oil
salt, pepper
Preparation:
Preheat the oven 350 degrees F
Cut the mini mozzarella balls in half.
Cut the tomatoes into small dice.
Mince the thyme.
Heat 2 tbsp tablespoons oil in a saucepan. Add the tomatoes, a pinch of minced thyme, salt and pepper. Cook 10 minutes, stirring occasionally.
Spread the sheets of phyllo. Oil them with a brush. Garnish center of each with the tomato fondue. Spread the mozzarella and olives on top. Sprinkle the remaining thyme.
Fold the 4 side of the phyllo sheets leaving the center open
Bake about 6 minutes, until crisp and golden and the cheese slightly melted.
Note: you can add some red crushed pepper before baking, if you like to spice your life.
Serve right out of the oven.
