Paulie's Sweet Potatoes

I never measure when I make these, so it's difficult to say how much of each ingredient, so I guesstimated how much if each item. If you stray from the amounts, they will still come out great!
This batch will go into a 9"x13" greased or buttered baking dish.
Ingredients
3 or 4 lbs Fresh Sweet Potatoes (or enough to fill the baking dish to a little below the rim) Peeled and cut into approx. 3"x1" pieces
2 or more cups Dark Brown Sugar
1 1/2 tsp. Ground Cinnamon
2 sticks Cold Butter cut into "pats"
1 or more cup Honey
1 or more cup Maple Syrup (pancake syrup will do)
Directions
Scatter the sweet potatoes into the dish. Take brown sugar into fist-fulls and sprinkle over the potatoes, moving them around a little bit every now-and-then so some of it falls into the dish. Sprinkle the cinnamon all over top. Lay the pats of butter all over the top, spacing them around 1/2 or less inches apart. Pour the honey and syrup all over the top.
Bake at 350 for about an hour, or until a fork slides easily into potatoes.
