- 1 pound ground beef
- 1 medium onion, chopped
- 1 can (14.25 ounce size) Mexican or chili style stewed tomatoes, undrained
- 1 envelope taco seasoning mix
- 1 can (15 ounce size) chili beans, undrained
- 1 can (6 ounce size) tomato paste
- 1 cup water
- 3 cups elbow macaroni or small shells, slightly undercooked (less than al dente)
- shredded Cheddar cheese
Heat a skillet over medium-high heat. Add the ground beef and onion. Cook, stirring to break up the meat, for 5 minutes or until the beef is cooked. Drain off any excess grease. Add the stewed tomatoes and taco seasoning to the beef. Cook, stirring frequently, for 5 minutes. Transfer the beef mixture to the crock pot. Add the chili beans, tomato paste, and water. Mix well. Stir the pasta into the chili mixture. Cover the crock pot and cook on low heat for 2-3 hours or until heated through and the flavors have melded and the pasta has absorbed the liquid and is fully cooked. Top with shredded cheese at serving time.
